Our Food

Our food is unique, we aim to give you’re an unforgettable culinary experience. We start by using the very best ingredients carefully sourced direct from manufacturers in Spain and Italy. In our eyes they do the hard work we just want to give everyone the chance to taste this delicious produce.

Spanish Produce

Our Serrano ham and firey chorizo comes from the Somalo family business.  Since 1900 they have been raising pigs and curing pork in Sierra de la Demanda in Burgos.

Italian Produce

Our unique semi dried tomatoes are naturally dried in wind tunnels which results in a delicious, juicy, sweet semi dried tomato like no other – no sign of any oven dried tomatoes here!

 

Genuine Italian artichoke hearts marinated in a traditional 40 year old Italian recipe.

 

Medusa trawlers catch the mackerel using sustainable methods, we have control of the fish fresh straight from the sea through to the finished marinated fillet.  Medusa have been producing mackerel this way through 4 family generations over the last 100 years.

 

Pesto produced in the region of Liguria, where it was originally created in the 18th century.  The green pesto is famous for its Genoese basil, grown in abundance in the region.  The recipe is created using traditional Italian ingredients, extra virgin olive oil, garlic and parmesan cheese.

Our Oils

All of our olive oil used in our marinades and toppings comes from a co-opaerative of farmers in Montalbano, Tuscany.  The Co-operative owns an oil mill (where the oil is pressed) and a bottling plant and they specilise in producing the highest quality Tuscan extra virgin olive oil.

Our Chicken

We created our marinade from a recipe picked up whilst travelling through Spain.  We use traditional Spanish spices like the warm smokey pimento paprika, combined with oregano, lemon and a touch of cumin to make this delicious marinade.  We only use the very best juicy succulent free range chicken breasts in all of our Bocca’s.
